Meal Prep Vegetarian Curry This meal was surprisingly good. I have never had tofu or eaten a curry but I was happy to find that it was very tasty. This recipe was taken from one of my favorite vlog duos Fit Couple Cooks . They are energetic and passionate about health. Not only do they provide yummy meals you can stick too, but also a lot of information to help broaden the knowledge about the foods you eat. It is important to know what is in your food or things that you may want to avoid so that you can make that decision for yourself. They bring all this to the table and more. Today marks the first day of trying new things. The hardest part keeping me from sticking to any diet is cost, convenience, and self deprivation (flavor and restrictions). It is so easy to just go thru a fast food restaurant, they do all the work and all I have to do is eat it. The problem is, I know and you know how bad fast food is for you. Even Harvard University has posted an article about our "Toxic Food Environment" that we live in today. For me things SHOULD be easier since I am a single mom and head of my house. I have control over what ends up in my cupboards. For years we have not had much in the way of snaky types of foods, it happens occasionally but not in mass quantities. We keep candy to a minimum and keep a giant basket filled to the brim with oranges, apples and more so the kids will always have a healthy snack.
